I only use my right hand to mix this and keep my left hand free (you will see how much this will help you very soon!) 3.Continue to mix the yeast in the water with your hand until it dissolves completely. 4.For a touch of seasoning, add 30g of sea salt. 5.Now, add flour to the bowl a little bit at the time. Don’t put all of it in the bowl! Keep a small portion of the flour to the side as you will need it later on… 6.Using one hand only once again, mix the ingredients together and remember, don’t squash your dough, mix it!! Start by cupping part of the mixture and turning it back in to the remaining flour while rotating the bowl, bit by bit. This can get pretty technical but have fun mixing and getting to know the dough. 7.If you prefer using a mixer, you can, but I really believe that the best neapolitan pizza dough is made using the traditional mixing method, your hands! 8.Continue to mix it until there is no more flour left and if you have one, try to move it onto the bench. 9. And now? The best part! Use your hands and get to know the neapolitan pizza dough!! Making New York-style pizza at home
New York-style pizza at home (Makes four 12-inch pizzas) For the dough: 1 teaspoon active dry yeast 1 teaspoon sugar ¼ cup warm water 2 cups warm water 1 tablespoon sugar 1 tablespoon salt ¼ cup olive oil 5 cups bread flour, plus more as needed Bloom the yeast in a stand mixer bowl with the teaspoon of sugar and ¼ cup water. When it’s frothy, add the rest of the ingredients and mix with the dough hook until a smooth ball comes together. It should be only slightly sticky; if it’s very sticky, add additional flour. Divide dough into four equal parts, roll each into a smooth ball and place in its own, well-oiled bowl. Age in the refrigerator for at least 24 hours or up to a week. For the sauce: 1 28-ounce can whole San Marzano tomatoes ¼ cup olive oil ½ teaspoon sugar, or more to taste 1 teaspoon dried oregano 2 tablespoons tomato paste Remove tomatoes from their canning liquid and discard the liquid. Squish or blend the tomatoes until smooth. Add remaining ingredients and mix until smooth. Makes enough for four pizzas. For the cheese: 6 ounces whole-milk, low-moisture mozzarella per pizza Grated parmesan for dusting Assembly: Place pizza stone on middle rack and preheat oven on its maximum temperature for one hour. Use convection setting, if available. After pre-heating, stretch pizza dough and place on a well-dusted peel (stone-ground whole-wheat flour works best). Top with sauce, dusting of parmesan, and then the mozzarella. Bake for 5-6 minutes. Rest on cooling rack before slicing.

Transcript (Partial): Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to show you how to make an amazing pizza dough, mmm just love it. A Friend of mine has been making pizzas for over 25 to 30 years now, and he invited me over to his house and he taught me how to make this recipe, this is his go to recipe for pizza, and now it is my go to recipe. Let’s get started. Down in the description I will list all of the ingredients and tools that I use to make this awesome pizza dough. First what we want to do is proof the yeast. So what we are going to do is take our 2 cups of water and heat it up between 105 and 115 degrees F. Let’s do that first, and then we will add our yeast and our sugar. All right once our water is heated up, I am going to take our sugar, and put that in there, and that is going to let the yeast feed on that. Put our yeast in there. And I am going to take a whisk, and give it a good whisk. And now we just let this sit, and let the yeast do it’s thing. It is going to get all nice and foamy, and then we will know that it is ready. And it will take about 5 to 10 minutes for the yeast to get completely active. All right as you can see, our yeast is active it is all nice and foamy, ready to go. And now what I am going to do is take our oil and put it in with the yeast. Go ahead and give it a good whisk. Okay and set this over here. Now I am going to take my flour and my semolina flour and put that in there, and my salt, and we will go ahead and mix this together really well. And what the semolina flour is going to do is it is going to help it give it a chewier crust, and add some more body to the dough. Now what we are going to do, is we are going to start adding a little bit of our flour mixture at a time, maybe about a quarter of it at a time. And we will start with our whisk, and then we will go ahead and move to a wooden spoon. Add some more flour, add some more flour, ok add just a little bit more of our flour, and we will save the rest to knead in. And then what I do when it gets about like this point, where it is pulling away, and it is sticking together, you go ahead and you come in and start coming with your hands, okay, and I am going to put it on our surface here, get all the flour out. And we are going to start kneading our dough, and the way I knead is you take your dough and fold it over, you push, and then you turn, fold it over, and push turn, just like that. And we will knead this for about 8 minutes. And as it gets sticky we will add more flour.

To make the pizza dough like a pro, start by pouring 1 litre of water in a mixing bowl. 2. Add 50g of sea salt to the water and stir with your hands to help it dissolve. 3. Sprinkle in 10% of the flour, using your hands, and stir once again. 4. Dissolve 1 tiny gram of yeast into the water, making sure to do this in order so that the yeast does not come into contact with the salt. 5. Slowly incorporate more flour into the bowl with one hand, and move the bowl around with the other. Continue this process, to make pizza dough like a pro, until you have used all the flour. 6. Once the pizza dough has incorporated to make a mass, transfer it onto your bench. 7. Begin to knead the dough on the bench, folding the sides in and pressing down, then turning the ball as you work it. 8. Continue Step 7 until you have a beautiful soft ball - to test if it's ready, poke your finger gently into the ball. If it rises back up, it's PRONTO! 9. Put the ball into a mixing bowl and cover it with a wet towel or some plastic wrap and leave it to rise for 2 hours. 10. Once the dough has risen, put it back on to your bench, creating balls that weigh between 200-250g 11. When the pizza balls have risen, take one of them and put it on your bench. Gently spread it out using your hands only. You will see that there is "gas" in the dough and you must make sure this remains, so don't roll it out using a rolling pin, use your hands. This part of the dough is the key to forming the crust! Pizza is arguably Italy's most famous dish and can now be found all over the world. We're most familiar with takeaway and even frozen pizza but once you've made your very own pizza from scratch, there really is no going back. In this video, Italian chef, Gennaro Contaldo shows you how to make homemade pizza at home - don't worry, you don't need a wood oven to follow this recipe. Here you'll learn how to make, knead and shape the dough before topping with delicious Parma ham and fresh rocket for a simple yet delicious meal! ------------------------------------------------------------------- Ingredients (makes 2 x large pizzas) For the dough 500g strong flour 5g salt 10g fresh yeast 325ml lukewarm water Topping for Margherita 150g tinned chopped tomatoes or tomato passata Salt & pepper 1 x tablespoons extra virgin olive oil & extra for drizzling 1 x tablespoon grated parmesan cheese 1 x ball mozzarella A few fresh basil leaves Topping for Prosciutto & Rocket Extra virgin olive oil for drizzling 1 x ball mozzarella 1 x tablespoon grated parmesan 4 x slices of Parma ham Handful of rocket Juice of ½ lemon Method First make the dough. Dissolve the yeast in the lukewarm water. Combine flour and salt in a large bowl. Gradually add the yeast mixture, mixing well until you obtain a dough. Place dough on a lightly floured work surface and knead for about 10 minutes. Cover with a cloth or cling film and leave to rest in a warm place for at least 30 minutes until the dough has doubled in size. Preheat the oven to 220 degrees centigrade. Take the dough, knock it back, then divide into two pieces, cover each with a cloth and leave to rest in a warm place for a further 30 minutes. Meanwhile prepare the toppings. For the Margherita, place tomatoes or passata in a small bowl, season with salt & pepper and stir in 1 tablespoon of extra virgin olive oil. Roughly chop the mozzarella. Sprinkle some flour onto a clean work surface and with your fingers spread each piece of dough into a roughly round shape with a border, make the dough as thin as you can but be careful not to tear it. Sprinkle some semolina or flour onto 2 large flat baking trays and place the pizza bases on them. Drizzle a little extra virgin olive oil over each base. On one, spread the tomato mixture evenly over, sprinkle with parmesan, scatter a few basil leaves over and top with mozzarella. On the other base, arrange mozzarella and parmesan all over, top with Parma ham. Place both pizzas into the hot oven and bake for 8 – 10 minutes. In the meantime, toss the rocket in a little extra virgin olive oil and lemon juice. Recipe scaled for 1-4 pizzas and FAQ http://www.beyondsalmon.com/2014/05/no-knead-thin-crust-pizza-dough-video.html I've scaled this recipe for 1-4 pizzas so that you can easily look up the amounts of ingredients. 1 pizza (by hand only -- too small for a stand mixer) 113 grams (4 oz) unbleached all-purpose flour 1/2 tsp SAF instant yeast 1/2 tsp sugar 1/2 tsp table salt (or 1 tsp Diamond Crystal Kosher salt) 79 grams (1/3 liquid cup) water at 70-90F 2 pizzas (by hand or with a stand mixer) 226 grams (8 oz) unbleached all-purpose flour 1 tsp SAF instant yeast 1 tsp sugar 1 tsp table salt (or 2 tsp Diamond Crystal Kosher salt) 158 grams (2/3 liquid cup) water at 70-90F 3 pizzas (with a mixer only) 339 grams (12 oz) unbleached all-purpose flour 1.5 tsp SAF instant yeast 1.5 tsp sugar 1.5 tsp table salt (or 3 tsp Diamond Crystal Kosher salt) 237 grams (1 liquid cup) water at 70-90F 4 pizzas (with a mixer only) 452 grams (16 oz) unbleached all-purpose flour 2 tsp SAF instant yeast 2 tsp sugar 2 tsp table salt (or 4 tsp Diamond Crystal Kosher salt) 316 grams (1 and 1/3 liquid cup) water at 70-90F How to store the dough: If you have enough 2 cup containers, it's most convenient to divide the dough into balls (1 ball per pizza) and store each dough in a container with 14 g (1 Tbsp) of oil. If you don't have enough 2 cup containers, don't divide your dough into balls. Lightly oil a large bowl (it should be at least 3 times as large as the dough) and place the dough into it. Cover with plastic and proceed with rising. When ready to bake, lightly oil the top of the dough and gently dislodge it from the sides of the bowl. Turn the bowl upside down over a cutting board (or piece of foil) and let the dough drop. Don't pull -- try to keep the shape of the dough. Cut the dough into pieces and shape each one into a pizza. You'll need to add 14 g (1 Tbsp) oil onto the parchment paper for each pizza when shaping. Rising schedule: The goal is to double your dough in volume and to let it sit in the fridge overnight to develop flavor. How you accomplish this depends on the temperature of your kitchen and your personal schedule. I find that the easiest thing to do is to make this dough at night a few hours before I am going to bed. Within 1-2 hours it should start to rise and can be put in the fridge overnight and up to 5 days. But sometimes life intervenes and you won't be around in 1-2 hours after making the dough. In that case, put it in the fridge right away. At some point before baking, get it out of the fridge and allow it to double at room temperature. This might take a while as the dough won't start to rise until it warms back up, so plan on 3-4 hours.

Yeasty, Chewy, All-Purpose Bread and Pizza Dough
I love making bread. I say bring on all the gluten you can. This is an awesome dough for bread, rolls or pizza. I'll also show you a cool new way of cooking pizza I learned from J, Kenji Lopez-Alt at the Food Lab. Enjoy, Here is the recipe: Start with one cup hot water, add 2 spoonfuls of active dry yeast and a little bit of sugar. Stir. Set aside for 5 minutes or until foamy. In a large bowl, add: 3 1/4 Cups of bread flour, 3 spoonfuls olive oil, 3 spoonfuls sugar, 1 spoonful of salt. and 1/4 Cup cold milk. Stir until combined. Add yeast mixture. Stir to combine. Then knead by hand or in your KitchenAid for 7 minutes. For pizza, heat up cast iron skillet, and turn on broiler in the oven. Lightly coat pan with olive oil. Once pan is hot, Roll out a small amount of dough for the pizza then place in pan. Add sauce, toppings and cheese. Immediately place under broiler. Remove once cheese just starts to brown enjoy. For bread, form dough into desired loaf or roll, cover with plastic wrap and let rise for 30 minutes. Preheat oven to 425 degrees. Place a shallow baking pan in oven. Remove plastic wrap and lightly spray loaves with water. Place a cup of hot water in the shallow pan. Place bread in oven and bake until golden brown. You can thank me later. Follow me : Twitter :https://twitter.com/thefrugalchef Facebook : https://www.facebook.com/pages/The-Frugal-Chef/245282282242 Vea este video en español - http://youtu.be/djFOjLxozpc Makes enough dough for four pizzas 1000 grams ( 1 kilo; 2.2 lbs; 7 3/4 cups) of plain white flour 2 grams (1/2 tsp) of instant active yeast 20 grams (1 TBS+3/4 tsp) of salt 700 grams (3 cups; 750 ml) of water at 90 to 95 degrees F (32-35 C) Take 2 TBS of water from the measured water and place on top of the yeast. Swirl the container and let it sit. Add the rest of water to the flour and mix it with your hands until all the flour is wet. You don’t need to knead it. Simply mix it. Don’t worry if the mixture seems a little dry. You will be adding the wet yeast and this will make it fine. Cover the bowl and let the flour and water mixture rest for 20 minutes. This will allow the gluten to relax and will allow the dough to stretch. Prep some water in a bowl to wet your hands. You will need to wet them two to three times. When you do simply wet them and shake off the excess. Do not scoop water onto the dough. A little extra water will make it too sticky. Add the salt and the yeast. Wet your hands and break a little piece of the dough and wipe out all the yeast from the container. Grab an end of the dough and stretch it over to the other. Repeat this process. Using your index finger and thumb pinch the dough lengthwise for a couple of times. Wet your hands and fold and pinch again. Fold for a third time. Wet your hands again if necessary. Cover the bowl and allow the dough to rest for 45 minutes. Fold it for a last time. Lightly oil a bowl with some olive oil and transfer the dough into it. Dab some olive oil on the top. Cover the bowl and place it in a warm, draft-free place. Let it double is size. This will take about five hours. Flour a board and carefully dump the dough on to it. Use the palms of your hands to help you release it from the bowl. Cut the dough into four of five pieces depending on how thick you like the crust on your pizza. Grab the pieces and squeeze the end at the bottom to form a ball. Place the balls of dough on the board and let them rest for about fifteen minutes. Don’t place them too close to each other as they will expand a bit. Cover the dough with a clean dish rag. You can now either store or cook your pizza. To cook it you can roll it out with a rolling pin or pull it out with your hands. If doing it by hand stretch it and place your fist under an edge. Shake the dough a bit and let it stretch with its own weight. Turn it and continue stretching. Lightly oil a pizza pan or dust it with cornmeal. Place the stretched dough in it and pull it to cover the pan completely. Top it with sauce if you like and your favorite toppings. Bake it in a very hot oven – 450 to 475 degrees F for 9 to 12 minutes or until the dough is cooked. If you are going to store it place each ball of dough in the middle of a generous piece of plastic. Carefully fold the plastic over it making sure to seal all ends. Carefully transfer it to the fridge and store it for a couple of days. You can also freeze the dough for up to two months. HOMEMADE PIZZA DOUGH 1 (1/4 ounce) envelope active dry yeast 2 tablespoons olive oil 1 tablespoon kosher salt 4 cup all-purpose flour 1 1/2 cups warm water (110 degrees F.) Additional flour for hands and surface In a small mixing bowl add yeast. Pour 1/2 cup warm water over yeast. Stir with fork. Let set 10 minutes. Yeast will become creamy and bubbly. Add the remaining warm water to yeast. Add yeast mixture, salt, olive oil and flour in the large bowl of a stand mixer fitted with a dough hook. Mix ingredients at medium speed until smooth and elastic, about 15 minutes. Place dough (dough will be sticky) in a lightly greased bowl. Cover with greased plastic wrap. Let dough rise in a draft-free environment for 2-3 hours. With floured hands gently push down dough, turn out onto a floured surface. Divide dough into your desired portions. Form into round(s) balls and let stand 20 minutes. I divide my dough into 6 equally portions to make 6 thin 10-12 inch pizzas. Stretch dough gently into thin shape(s). Place on baking sheet evenly sprinkled with cornmeal. Top with desired ingredients. Bake in a preheated 450 degrees F oven for 10-15 minutes. Suggested Pizza Toppings: onion, thinly sliced or caramelized bell peppers (all colors), thinly sliced pizza sauce, homemade or store bought cheese, any type chicken, grilled, baked or poached pepperoni ham, diced banana pepper, thinly sliced black olives green olives mushrooms, sliced tomatoes basil, fresh corn just to name a few!! TIPS: Unused pizza dough balls can be refrigerated up to 1 week in lightly greased zip-top plastic bag or airtight containers. Before stretching dough, allow it to come to room temperature. ENJOY!!
